Starve them for a bit. If you have another tank, drop some dirty drift wood/moss from that tank in. The shrimp will all gather on it and you can get a great colony shot. Makes it look busy without getting shots of food.
Take pictures when you feed them or sit and wait for a good picture of one doing something, I never realized how easy it is to watch your tank for an hour straight until I tried taking pictures of my shrimp.
