Any of your fishes may be eating them.
Kuhli loaches eat shrimp.
Have you checked behind the furniture? That’s where mine were, and maybe your betta had eaten some (I only had one betta that never attacked any shrimps, to be true he probably thought he was one)
different water source may be it as well, but they should recover from this change…
Shrimp need calcium and other minerals to molt and grow properly. Check out gh and kh water parameters.
