KH and GH are important values for shrimp. I’d get a test for those and make sure they’re in range for neocaridina shrimp.
Shrimp hold the eggs right there under their tails until they hatch. If they do drop them off their tail, that means that something has gone a bit wrong- it could be an inexperienced mother, or poor parameters. Keeping the mothers happy and healthy will mean the babies are happy and healthy.
